LET'S TALK, LET'S COOK by Mary Alesi
Recently I attended a funeral of a friend, Charles (Chuck) Peter Gallucci, who was an extraordinary person. The priest at his funeral Mass called him a "Saint" and he really was! In a nut- shell, he was a rich building contractor who met Mother Teresa of Calcutta. The rest is history!
She asked him to build a church for the poor in Mexico and he did! The name of the parish was Immaculate Heart of Mary. The new Church was dedicated in September 28, 1994. Chuck also reconstructed a convent for the Sisters of Trinitarians of Mary in Mexico and much more.
He remarked after all his endeavors were completed and all his money was gone:
"For me, I have come to realize that in order to get everything you want you must give everything you have. Today, with my pockets empty again, I have never felt richer in my life. My spirit seems to have been blest with a power of peace and joy that I know comes only from above."

Beanie Bean Salad
Ingredients:
One small can green beans
One small can yellow beans
One small can kidney beans
One small can lima beans
One small can garbanzos beans
One large sweet onion cut in rings
One green pepper diced slightly
One cup celery diced slightly
Dressing
Ingredients:
1-cup vinegar
¾ cup sugar
1/3 cup salad oil
1 teaspoon salt
½ teaspoon pepper
Mix vegetables together after draining. Mix dressing and add to vegetables. Marinate several hours before serving. This is a good dish for a picnic
Ambrosia Salad
Ingredients:
1 can pineapple tidbits
2 cans mandarin oranges
1 -pint sour cream
One can coconut flakes
1 -cup miniature marshmallows
Drain fruits, place in bowl with coconut and marshmallows. Fold in sour cream. Serve cold. Makes about eight servings .
Sloppy Joes
Ingredients:
3 pounds ground beef
¾ cup diced celery
¾ cup diced green pepper
¾ pound onions, chopped
2 ½ tablespoons sugar
¾-tablespoon salt
3 tablespoons prepared mustard
2 cups catsup
2 ½ tablespoons vinegar
¼-teaspoon ground cloves
Fry meat until brown. Drain off grease. Put meat in pot and add other ingredients. Simmer until celery, peppers and onions are soft.
Serve on hamburger buns or rolls
Makes 12 servings
